Italian Salad Dressing

In the spirit of being more healthy, I made Salmon and Salad for dinner a few nights ago. Here's my attempt at a homemade dressing.


At some point during the meal, Pumkin looked at me and said "wow, this is really good". So I'm going to assume that it was ok. :)

I didn't measure anything, so I'm going off of memory.

1/4 Cup   Olive Oil
1/4 Cup   White Wine Vinegar
2 TBS      Dried Oregano
1 TBS      Malabar Black Peppercorns (Buy it at Fresh and Easy)
2 TBS      Shredded Parmesan Cheese
1 TBS      Multi Spice Grinder Mix (whatever you've got around will be fine)
1 TSP      Garlic Powder
1 Clove    Garlic (finely chopped)
-------       Lemon Juice
-------       Chili Flake
-------       Himalayan Pink Salt
-------       Tony Chachere's Cajun Spice

There are a few of things you need to do to make this better than it should be.

1. Put the Oregano in the palm of one hand and use the palm of your other hand (assuming you have two) to mash it into a fine powder. THIS IS THE ONLY THING I WOULD CONSIDER A SECRET.
2. Taste as you go. Anything using Vinegar can go bad really quickly if you don't taste as you go. Trust me.
3. Be VERY careful with the pink salt. It is VERY salty.

There ya go. Quick and easy Italian dressing. Have fun!

I realize as I begin to type this that I never posted the steps for making my carnitas. I also realize, I forgot pictures so the next time I make this, I'll add them. That being said, I have but one more thing to add... LARD IS FOR BITCHES! (Memorial Day Carnitas re-mix). Traditional Carnitas is made using a TON of lard. Me, I'm way more healthy than that and have replaced the lard with Bacon Grease.

New Dutch Oven!

I couldn't resist purchasing a  SUPER-AWESOME DUTCH OVEN  from Amazon. As I type, I realize that UPS tried to drop it off today and I was in K-Town eating delicious Korean BBQ, so I missed it. Hopefully I can get my hands on it tomorrow to get it seasoned in time for the weekend. The maiden voyage for said Dutch Oven will be Carnitas! Mostly because I just bought a 6 pound Pork Shoulder that really wants to be in my mouth-hole. See you guys this weekend.
